First Things First -- Shrimp Fritters
Friendly get togethers for sporting events and celebrations are a sure way to beat the winter doldrums. They are also a prime source of new recipes. Such was the case at this year's Superbowl. Not only did we win a little cash but I got a sure fire appetizer recipe for shrimp fritters. Our new friend, Mark, served these with a dipping sauce. They were firm enough to be called finger food and everyone loved them.
INGREDIENTS
1 pound of cooked, peeled, and deveined shrimp
2 jalapenos (I remove a bit of the seeds)
1 scallion
3/4 cup sweet corn
1 egg
Pulse all of these ingredients in a food processor. Mix in:
1 cup panko bread crumbs.
Pan fry in olive oil until browned and firm.
To serve, mix mayo and siracha to your liking and dip fritters.
I do not eat fish too often, but these sound yummy; I will have to try them soon. I have been enjoying reading your cooking column. Thanks for sharing!
