Soup is on...Venus DeMilo Soup

In addition to cooking for my family I also prepare a meal once a month for a group of 20 people. I must stay within a budget, transport it to a second location ( or prepare it in a kitchen with limited tools), and the meal must be appeal to many palates. I love it when I find a recipe like Venus DeMilo Soup. My friend Trudy gave me this recipe. She was surprised that I hadn't heard of it. The explanation for this being that it came from a restaurant in the Attleboro/Franklin/Taunton area -- a little out of my regular "eating zone".

 The ingredients are few, that flavor is great,and it is a real quick meal. Add some salad and bread and you are done. I frequently substitute different vegetables or fresh for canned as the budget allows. Have fun and enjoy.

INGREDIENTS

1 1/2 pounds ground beef (or turkey)

1 16 ounce can of stewed  (or diced) tomatoes

1 packet onion soup mix

1 small bag of frozen mixed vegetables

2 or 3 15 ounce cans of beef broth

1 to 2 cups cooked orzo

In a dutch oven or your favorite soup pot brown ground beef, season to taste.

Add all ingredients except the orzo. Bring to a boil. Add orzo and simmer for 5 to 20 minutes.

Enjoy.
