   Have you ever been browsing through a cookbook and happened upon a recipe that you just had to make? For me it is usually a strange name or weird ingredient. Such is the case with this CRACKER FUDGE. Yes, that would be saltine crackers as an ingredient in fudge. Fudge was a challenge when I used a traditional recipe with a candy thermometer. I was thrilled to find Rachel Ray's 5 minute recipe. This is easy with few ingredients .Simple to make.

 Ingredients

1/4 pound (one sleeve) saltine crackers

3/4 cup peanut butter (smooth is best)

3 cups of sugar

1 cup milk

Crumble crackers  into small pieces into a mixing bowl. Stir in the peanut butter. In a heavy saucepan combine sugar and milk and bring to a boil. Continue to boil, stirring constantly for five minutes. Pour over crackers and mix with an electric mixer until smooth. NOTE: if you use chunky peanut butter it will be hard to discern if all the cracker crumbs have combined, Pour into a buttered 8"x 8" pan. Cut into 1" squares when the fudge has set. Pack into a tightly covered tin separating the layers with waxed paper. Refrigerate.
