Mom's Holiday Cranberry Bread
Sift together twice:
2c flour
1/2 tsp. salt
1/2 tsp. baking soda
1 1/2 tsp. baking powder
1c sugar
In a separate bowl, mix:
Zest and juice of one orange
1 tbsp. shortening
1 tbsp. butter
3/4 c boiling water
Mix wet and dry ingredients, then add:
1 beaten egg
1 c. sliced Massachusetts cranberries (Holliston cranberries if you can get them!)
1/4 c cooked oatmeal
Mix well. Cook in a loaf pan at 350 degrees for about an hour. I use cooking spray on the pans and parchment on the bottom which makes the loaves pop out easily.
Good luck and enjoy!
